I Am On A Quest For Self-improvement. How Can I Help Myself In Academics, So I Can Finish My Degree?

I am currently on a campaign for self-improvement. A lot of aspects are involved. One aspect I am working on is improving my academic self. I currently work about 50 hours a week, and I am not sure if I will be able to cut down on hours. Currently, I am employed as a para-professional, with a promise of promotion to professional status once I receive a related bachelor’s degree.
I graduated with a BS in biological sciences and I am wanting to expand upon that in the future.
Currently, I am focusing on finishing engineering. The problem is my work schedule and how it doesn’t fit into the regional engineering school’s marketing plan. I am a non-traditional student. They want overacheivers, and are trying to accomplish this by having those who are driven to succeed “influence” the others. For example, many engineering students live together, separate from the rest of the university. This is now expected and required. Is there any chance I can pursue distance education for BS?

Wow. This is a touchy situation!
My first guess would be to look at your own state’s university system. Phone or visit websites for all of your state universities and look for distance learning options and online degree programs. If you’re able to transfer a lot of general education and intro. engineering courses, and complete the upper-level courses in the major by distance learning or flex learning (mostly distance, limited time on-campus) then you’d be set.
I know one engineering prof from Miami University (Ohio) who has done lots of online courses, and I believe their program has an agreement with some colleges 100 miles away to contribute essential courses to their engineering students–been a while since he and I had a chat and I’ve forgotten the details–however I am sure as shootin’ that their program prepares students for licensure!
Anyway, seems to me that engineering is one of those subjects that lends itself well to online instruction.
Staying in-state with public universities will cost less, tho’ online instruction is always at least a little more expensive.
